We are serious about food and wine, and have always provided recipes, advice on cooking techniques and wine tastings to enthusiastic ‘foodie’ guests. Sometimes, however, this doesn’t satisfy the need to cook, eat and drink, so in May 2025, we’ll host a Food & Wine Week with celebrity chef, Tom Kime.
During the Food & Wine Week, Tom will host a 2-hour cooking master class every day. He’ll cover a range of topics and reveal some professional secrets to help you take your home cooking to a new level. Why watch Jamie Oliver, Rick Stein or Nigella Lawson, when you can experience similar demonstrations live? The best part, though, is that you get to taste everything Tom prepares, which can be up to 20 exceptional dishes over five days.
Tom Kime is a protégé of Rick Stein (The Seafood Restaurant in Padstow), Ruth Rogers (The River Café in London) and David Thompson (Darley Street Thai in Sydney), and author of six excellent cookbooks. His fifth book, Fish Tales, won the World Gourmand Award for Best Sustainable Book. Tom is not a practitioner of ‘fusion cooking’ (and we suggest that you don’t ask him about it), but he instead cooks authentic food the way each respective culture has done for decades, or indeed centuries. Did you know the combination of chocolate and chilli is thousands of years old? Tom’s classes are an absolute sensory delight with amazing smells, funny stories and beautiful food cooked with care and respect. He takes guests on a culinary journey from Thailand to Malaysia, Vietnam, China, Japan, France, Morocco, Spain, Italy and more.
In the evening, we’ll convene on the lodge verandah for selected wine tastings. Each day we’ll taste a range of James Halliday’s favourite wines and explore variations in style and character from different Australian wine regions.
